This is one of our favorites as you can put it in the oven on Sunday morning and at Noon it is done and you do it all in one dish.

Ingredients:

  • 2 to 4 lb. beef roast – Chuck, Arm, Rump or any Roast
  • Potatoes – as many as you like
  • Baby Carrots – as many as you like
  • Worcestershire sauce

Directions:

  1. Set oven at 350, Place roast in roasting pan, rub with your favorite spices and cover top of roast with Worcestershire sauce.
  2. Add water or broth to cover bottom of pan about ¼ inch. Put in oven and forget for about 3 hours.
  3. After 3 hours have passed- Add quartered potatoes and baby carrots, return to oven for another hour.
  4. Remove from oven spoon out potatoes and carrots put them in a serving dish.
  5. Let meat stand in pan for 10 minutes and remove from pan and place on serving platter.
  6. Slice roast and serves – Remember to slice roast across the muscle grain.

This is an excellent Sunday family dinner – Add dinner rolls, salad, and a nice pie for dessert and you can’t go wrong. We always have leftover’s for sandwiches and meals the next day.
